Jam roly poly

Hello guys hope your all well?

Today I'm going to share with you a British classic! It may not have the best appearance but this homely looking pud is perfect for the cold nights that are fast approaching! Best served warm with custard!:) 

Ingredients 
50g margarine  
50g shredded suet
250g self raising flour
140ml milk 
5oz raspberry jam

Method
Mix together the flour, and margarine until the mix resembles bread crumbs then add the suet and mix well, add the milk until a soft slightly sticky dough is formed ( you may not need all the milk)

Roll the dough out into a rectangle onto a floured surface about 1/4 inch thick 

Spread on the raspberry jam and roll into a sausage

Wrap the dough in parchament paper leaving some room as the dough will rise and spread and then wrap again in foil again leaving some room

Bake at 180 degrees, place a pan of boiling water at the bottom of the oven! And bake the roly poly for one hour then uncover and bake for a further 5-10 minutes or until golden!

Butterscotch chip cookies

Hello everyone,

First let me apologise for the lack of posts.....I am working on exciting new things for October so stay tuned for that! However in the meantime here is a delicious recipe for butterscotch chip cookies! 

You will need:-
1 cup butter
1/2 cup granulated sugar 
1 1/2 cup soft dark brown sugar
2 eggs
3 cups plain flour
1 tsp salt
1/2 tsp baking powder
1 tsp baking soda
1 cup butterscotch chips

Method:-
Preheat the oven to gas mark 4.

Cream together the butter and both sugars until  light and fluffy, add the eggs and beat in well.

Sift together the flour, baking powder, baking soda and salt.

Add the flour mixture into the butter mixture and mix until all combined.

Using an ice cream scoop or a tablespoon, spoon the mixture onto a greased baking tray a couple of inches apart.

Finally sprinkle on some butterscotch chips and bake for approximately 10 minutes or until lightly golden.

Chocolate cream cupcakes

Hello everyone,

Today I'm going to share with you a delicious recipe for chocolate cream cupcakes......a delicious fluffy sponge, filled with vanilla custard and topped with melted chocolate! 
 
Amazing right? So let's go over the ingredients!

For the cupcakes
8oz butter
8oz sugar
8oz self raising flour 
4eggs 
1/4 cup milk 

For the custard 
1 egg
2 egg yolks 
2 cups whole milk
1/2 cup sugar
1/4 cup cornflour
2tbsp butter
2tsp vanilla 

Topping
150g dark chocolate 

Method
To make the cupcakes, preheat your oven to gas mark 4 and then cream together the butter and sugar until smooth and creamy, add in the eggs one at a time, mixing well in between each addition ( add a tsp of the flour with each egg to stop the mix curdling ), gently fold in your flour and add you milk!  Place into a prepared muffin tin and bake in a preheated oven for aprox 15 minutes or until a skewer inserted into the centre comes out clean! 


For the custard, place egg, egg yolks, 2tbsp of your sugar and your cornflour into a large bowl and mix well! Meanwhile heat your milk and remaining sugar in a saucepan...once it reaches a boil, slowly pour your milk mixture into your egg mixture stirring the whole time! Place all the mixture back into the saucepan and heat through and keep mixing (very important) until the mixture thickens, take it off the heat and stir in the butter and vanilla! Wrap with cling film and place in the fridge to cool competely!  


Once the cupcakes are cool, slice them directly in half, spoon some of the cooled custard into the centre and sandwhich the cupcake back together! Melt your chocolate in a double boiler or microwave and spoon some over each cupcake and your done!

Mint chocolate chip cookies

Hello guys!

So chocolate chip cookies are an all time favourite! But were not making chocolate chip cookies...no we are making MINT chocolate chip cookies! Taking these amazing cookies up a notch (or two)! The mint just makes them even more fabulous! So here are the ingredients:- 

For the cookie dough
200g softened butter
300g soft brown sugar
2 eggs
1tsp vanilla extract
1/2tsp peppermint extract
1tsp baking powder
200g chocolate chips
70g cocoa powder
300g plain flour

For the icing
1/2tsp peppermint extract
140g icing sugar
5tbsp boiling water
2tbsp cocoa powder

Method
1) preheat the oven to 180 degrees
2) cream together the butter and sugar until light and fluffy
3) add in your eggs one at a time, mix well inbetween each addition
4) add your vanilla and peppermint extract and mix well 
5) fold in your flour, cocoa powder and baking powder until incorporated! Stir in your chocolate chips
6) using an icecream scoop or a tablespoon, spoon the mixture onto a greased baking tray (leaving some room inbetween each cookie) and bake for around 12 minutes!

Whilst they are baking lets make the glaze! Add all the glaze ingredients to a saucepan and heat on low until all the ingredients are melted and combined!

Once the cookies are baked, take them out of the oven and drizzle over the glaze and your done!

Calling all Mary Berry fans!

Hello everyone!

Well i have a exciting blog post for you all.....the lovely people over at the BBC good food bakes and cakes show are giving you the chance to win an afternoon tea and a meet and greet with Mary Berry at the good food show ( for more information on the show and to purchase tickets visit www.bbcgoodfoodbakesandcakesshow.com ) as if that is not enough the lucky winner will also win a Kenwood stand mixer and a signed Mary Berry cookbook! 
To take part in this fabulous competition show them what your made of! Create them a bake or a cake.....there will be 1 adult and 1 junior winner from each category! For the bake category bake them anything that is not a cake...show off you bread skills, bake some cookies make a pie, you name it! But remember is has to taste as good as it looks! And then there is the cake category, they want you to make a spooky halloween cake, think witches, ghosts, bats! Get creative and scary it can be anything from cupcakes to a spooky wedding cake! 

Your fabulous bakes will be judged by the award winning master patissier and baking star, Eric Lanlard. 

Your spine chilling halloween cakes will be judged by the famous British baker, cook and TV personality John Whaite.

Important bits!
All competition pieces must be the work of the individual who has entered.
  • The closing date for all entries is midnight Friday 26 September
  • Shortlisted entries will be informed by Friday 3 October
  • All shortlisted entries must be brought to the Show between 8:30am and 10:30am on Saturday 25 October 2014 ready for display and judging. Please note any arrivals after 10:30am will not be judged. The Show opens at 9:30am so if you arrive before this time you must leave the show once your entry is delivered and return at 9:30am.
  • All shortlisted entries in the Bakes Category will receive a complimentary ticket to the show including a seat in the Eric Lanlard Theatre session at 11:00am. We regret that we cannot refund any tickets already purchased.
  • All shortlisted entries in the Cakes Category will receive a complimentary ticket to the show including a seat in the John Whaite Theatre session at 2:00pm. We regret that we cannot refund any tickets already purchased.
  • Should the entrant want to purchase additional seats for family, friends etc, we can reserve seats together in the session to be collected and paid for on arrival.  
  • Participants must agree to photographs being taken of the entries, both by organisers and the public. Should the work be reproduced, the organisers will not be liable.
  • River Street Events are not responsible for any loss / damage of competition entries
  • Winners will be announced at 3pm on Saturday 25 October at the BBC Good Food Bakes & Cakes Show.
  • Afternoon Tea will take place at 5pm on Saturday 25 October. All entrants must be available at this time should they win.  The Meet & Greet will take place during the Afternoon Tea.
  • A junior entry is anyone under the age of 16.
  • No professionals can enter the adult category. We consider professional as someone who has been professionally trained and runs a business. Any professionals wanting to showcase their work can apply for a display space on the Cake Parade. If you are unsure whether we class you as professional please ask.
  • There is no height restriction for entries, however they must fit on a 16” x 16” board.
  • The Bakes category is a taste and visual category therefore all entries must be suitable for tasting.
  • The Cakes category - The entry must be completely edible, however dowels and cake boards can be used to support a tiered cake.
  • The Cakes category - All decorations must be edible, however wire and floral tape will be allowed should you be using sugar flowers.
  • We regret that we will be unable to return any entries, however if you wish to collect your Bake or Cake at the close of the event, we will arrange access for your to do so at 5pm on Monday 27th October.

10 great baking tips

Hello lovelies,

A good tip (or 10) makes such a difference in the kitchen....so i thought i would share with you 10 tips that i always use! 

1) I find it so annoying when you get one of those spare of the moment urges to bake, but of course you haven't prepared....your butter is chilling in the fridge and ya'll know to make cakes we need room temperate butter! But you don't want to wait a couple of hours....No problem! Take out your desired amount of butter, pop it in a microwaveable dish and put it in the microwave for a few seconds at a time until its soft to touch but not melted! Keep your eggs in the fridge too....pop them in a cup of warm water for a minute or so!

2) always getting odd bits of fluff stuck to your fondant...this has nothing to do with uncleanliness whenever we wash our surfaces, small fibres get left behind which end up in our fondant! Take a small ball of fondant and roll it around your work surface, and your hands especially after you have washed and dried them! All the bits of fluff off the hand towel etc will stick to the ball of fondant and not your finished icing! (Obviously throw the ball of fondant away after use;)) 

3) If your ever using a small amount of fruit or chocolate chips etc in your cakes, cover them in a teaspoon of the required flour to stop them all sinking to the bottom of the cake

4) When making a chocolate cake instead of using parchament paper! Grease the tins with butter and spinkle some cocoa powder around the whole tin, tap of any excess! Not only does it stop the cakes sticking it gives an extra rich flavour! 

5) When making a cake always cream the butter and sugar very well for about 5 minutes and when it comes to adding the flour fold it in gently! Never over mix once the flour is in the batter! Following this will produce lovely light and fluffy cakes!

6) Always sift your icing sugar and cocoa powder they tend to clump up a lot!

7) When making a chocolate cake always add a teaspoon of vanilla extract it helps amplify the chocolate taste!

8) Use a clean spirit level (workmans tool) to check if your cakes are level!

9) When covering a cake in ganache or buttercream! Dip your spatular in hot water shake off excess water and go around your cake with it! This will give a smooth glossy finish! 

10) Don't have a fondant smoother (you should get one) take a small ball of fondant and use that to smooth over your cake!

Lemon cupcakes

Hey guys hope your all ok?
Today im going to share with you my delicious recipe for lemon cupcakes! A vanilla cupcake, filled with lemon curd and topped with a creamy light topping! YUM!!:)  

Ingredients (makes 24)

For the cupcakes
12 oz butter 
12oz sugar
12oz self raising flour 
6 eggs
1 tsp vanilla extract 
1/4 cup of milk

For the lemon curd filling
See my blog post for lemon meringue pie and follow the instructions on how to make lemon curd or you could buy lemon curd and use that!

For the topping 
Any cream you like, I'm using dream topping as that is what my family like but you could use whipped cream, buttercream and so on! 

You will also need some extra lemon zest and some yellow and white fondant for decorating!

Method

For the cake
Preheat your oven to gas mark 4

Cream together the butter and sugar until light and fluffy 

Add in the eggs one at a time mixing well inbetween each addition (add 1tbsp of the flour in with each egg to stop the mix from curdling)

Add in the flour and mix only until combined

Add the milk again mixing only until combined 

Place into cupcake liners and bake for approximately 15 minutes or until a skewer inserted into the centre comes out clean

Leave to cool completely
 
Once cool take out the centre of each cupcake using an apple skewer or a knife and fill each one with a teaspoon or two of lemon curd

Finally top with your desired cream, sprinkle on some lemon zest and finish with a yellow flower! Here is some pictures on how i did that!

LONDON'S BEST BAKERY

The BBC Good Food Bakes and Cakes Show team have launched a campaign to find and crown London’s Best Bakery 2014 and are asking the public along with a panel of expert judges to choose the winner.

Coinciding with the launch of the first BBC Good Food Bakes and Cakes Show, and in conjunction with BBC Good Food Bakes and Cakes Magazine, the show team are scouring London to find the very best bakeries. Combining public voting, mystery shopping and a panel of expert judges the show will crown one exceptional bakery as London’s best.

Katy Truss, artisan food expert, who is managing the competition on behalf of the BBC Good Food Bakes and Cakes Show says about the campaign…

“London is full of amazing bakeries, and with ‘real bread’ and artisan producers more popular than ever, I’m sure that with the help of London’s food-­‐lovers we’ll uncover some real gems. It’s a fabulous way of giving recognition to those going the extra mile, mindfully sourcing their ingredients, engaging with their community and above all selling high quality bakes and cakes.”

Nominations from the general public, customers, suppliers and the bakeries themselves will be taken on the show website (www.bbcgoodfoodbakesandcakesshow.com). Public voting will then take place online, resulting in a shortlist of the 10 most popular bakeries. This shortlist will be mystery shopped by a panel of baking bloggers and visited and reviewed by experts and the show team. Judges will then agree on the final three bakeries, and the winner will be announced and presented with their trophy at the show.

• Tim Kinnaird - MasterChef UK Finalist and chef owner of the award winning Macarons and More

S'mores cupcake recipe

Hi guys!

Today I'm going to share my recipe for s'mores cupcakes.....i have one word for these cupcakes "amazing"! A biscuit base, a chocolate sponge, filled with either Nutella or chocolate ganache and topped with Marshmallow! "A-MA-ZING"! Here is what you will need to recreate these wonderful treats!

(Makes 24) 

Biscuit base
7oz digestive biscuit crumbs
2oz sugar
5-6tbsp melted butter

Chocolate cake
12oz butter
12oz sugar
8oz self raising flour
4oz cocoa powder
6 eggs 
3tbsp hot water

Extras
400g Nutella (or melted chocolate or chocolate ganache...see my recipe on my blog)
Marshmallow fluff.....or 24 marshmallows 

So let's get baking:-

Preheat your oven to gas mark 4

Biscuit base
Mix all the ingredients together until well combined

Spoon 2tsp of each mixture into each cupcake cake and press down until firm

Bake in the oven for 4 minutes, remove and let cool
 
Chocolate cake
Mix the flour and cocoa powder together

In a separate bowl cream together the butter and sugar until well combined 

Add in the eggs one at a time mixing well inbetween each addition (add 1tsp of the flour and cocoa powder mixture with each egg to stop the mix from curdeling

Add in the flour and cocoa powder and mix just until combined add the water and mix until combined

Spoon onto the top of each biscuit base and bake for aprox 15 minutes or until a skewer inserted into the centre comes out clean 
 
Leave the cakes to cool, once cool use an apple skewer or a knife and cut out the centre of each cupcake

Fill it with Nutella or your favourite chcolate filling such as ganache or just melted chcolate 

Spread on your marshmallow fluff and top with more biscuit crumbs 

You could even top with a marshmallow and toast the marshmallow under the grill for a few seconds (keep an eye on it though they burn very quickly)

Brownie traybake

Hey guys hope your all well? It's been a few weeks since I've been able to sit down and write a blog post.....manic few weeks but back to it now and I have loads of new recipes to share with you all! Starting with a brownie tray bake! So let's get started...
Ingredients 
350g good quality dark chocolate
500g granulated sugar
175g plain flour
6 eggs
225g butter
1tbsp vanilla extract
1tsp baking powder
1/2tsp salt
Method
Preheat the oven to gas mark 4 and grease and line a baking tin or ceramic dish 

Melt together the chocolate and butter

In a bowl mix the sugar and eggs, add the melted butter and chocolate, mix in the salt, baking powder and flour until well combined 

Pour into the prepared dish and bake for approximately 30mins or insert a skewer into the centre and it should have a moist crumb not wet batter and its done!

Manchester tart recipe

Hello guys! Today I'm going to share with you a delicious recipe for Manchester tart....for those of you who don't know, a Manchester tart is a short crust pastry with a thin layer of raspberry jam, filled with vanilla custard and topped with coconut! 

Ingredients

Pastry:-
1 cup self raising flour
1/2 cup cold butter
Few tbsp cold water
Custard
2 cups whole milk
1/4 cup cornflour
1/2 cup granulated sugar
1 whole egg
2 egg yolks
3 tsp vanilla extract 
2 tbsp butter
Extras 
3 tbsp coconut (shredded)
2 tbsp raspberry jam 

Method 
1)  to make the pastry...preheat your oven to gas mark 4!
2) mix together your flour and butter until it resembles breadcrumbs
3) slowly add your water a tbsp at a time until the pastry comes together into a ball....the less water you use the better!
4) cover in cling film and place in the fridge for 30 minutes
5) roll out your pastry on a lightly floured surface to about 1/4 inch thick
6) place in a greased pie dish, if it tears grab another tiny bit of pastry and press it into the tear with your fingers and smooth out, prick base with a fork
7) blind bake for 10 minutes ( cover the pie with foil and add some baking beans )
8) remove foil and baking beans and bake for a further 15 minutes until golden, remove and let cool completely 
9) for the custard...in a bowl mix together 3 tbsp of the granulated sugar, egg, egg yolks and cornflour
10) in a saucepan heat up the milk and remaining granulated sugar to a gentle boil 
11) once reached a boil mix some of the milk about half slowly and mixing the whole time into the egg mixture ( we are tempering the eggs....introducing them to the heat so they don't scramble) 
12) add the egg mixture into the pan, place back on the hob and  stir consistently until the mixture begins to thicken ( it is so important to stir the whole time otherwise you will be eating scrambled eggs and not custard )    
13) once thick remove from the heat add in the butter and vanilla and mix in well, place the custard in a bowl and cover with cling film, place the cling film directly on top of the custard to stop a skin forming and place in the fridge to cool 
14) we are now finally at the assembly stage....take your cooled pie crust and spread on an even layer of raspberry jam
15) fill in the pie with your cooled custard
16) finally sprinkle on a layer of coconut and enjoy!

Oreo frosting

Hey guys, today I'm going to share with you a yummy recipe for oreo frosting, great on a variety of cakes, cupcakes, brownies....whatever your heart desires! 
Ingredients 
2 1/4 cup vegetable shortening (room temp)
1kg icing sugar
6 tbsp butter (room temp)
5 tbsp cold water
2 tsp vanilla extract
3 crushed oreo's  
Method 
Mix together the shortening and butter until combined, add the vanilla and icing sugar and mix until combined....at this stage the frosting may appear thick and crumbly, slowly add your water a tbsp at a time until you have a creamy consistency (you may need more or less water depending on consistency, too thick add more water, too runny add more icing sugar), finally mix in your oreo's! 

This frosting is great on all sorts of cakes and tastes delicious!

Caramel frosting

Hello lovelies!!

Today I'm going to share with you a super scrummy recipe for caramel frosting.....this is one of them frostings you just can't get enough of! Its delicious, easy and quick to make!

Ingredients
1 cup brown sugar
1/2 cup of butter 
1/4 cup milk
2 cups icing sugar
1 tsp vanilla extract 

Method
1) in a saucepan melt the butter
2) once melted add the brown sugar and bring to the boil and let it boil for 2 minutes stirring consistently
3) add the milk....be carefully it will froth up, keep stirring and let it come back to the boil
4) remove from the heat and add the vanilla and mix well
5) slowly add the icing sugar until its mixed in well....the frosting may appear runny but it will thicken to a spreadable and piping consistency when it cools! Once it has cooled mix well before use!

 
Tip:- add some sea salt into the finished frosting for a salted caramel frosting:)

Lemon meringue pie recipe

Hello everyone! Hope your all ok? Today I'm going to share with you a delicious recipe for lemon meringue pie....yummy!! This recipe has 3 elements:- short crust pastry, lemon curd filling and a fluffy meringue topping! So let's get started, you will need:- 
For the pastry
1 cup plain flour
1/2 cup really cold butter
1-4tbsp ice cold water
For the lemon curd
1 1/2 cup water 
1/4 cup cornflour
1 cup granulated sugar
Zest and juice of 2 lemons
4 egg yolks 
1.5 tbsp butter
For the meringue
4 egg whites
5tbsp granulated sugar
Pastry
Put flour in a bowl and mix in butter until mixture resembles fine breadcrumbs

Slowly add in water a tbsp at a time, the less you use the better.....once you can bring the mix together with your hands it's done! 

Wrap in cling film and refrigerate for at least 15 minutes, pre heat oven to gas mark 4

Take out and roll out to a couple cm thick, it may break and crumble a lot but just keep working with it

Place into a greased pie dish, if it tears, simply take another piece and press it into place, use your hands to even it out

Prick several times with a fork, place foil or parchament paper into the pastry case and fill with baking beans or dried rice, bake for 10 mins

Remove the foil and baking beans and bake for a further 15 mins or until slightly golden 

Lemon curd
In a bowl beat the egg yolks

In a saucepan mix together water, sugar, cornflour, lemon zest and lemon juice and bring to a gentle boil whisking the whole time so no lumps form, it will thicken

When its come to the boil mix in the butter then take 2 cup fulls of the hot mixture and slowly add it to the egg yolks again whisking the whole time (this is known as tempering, we are introducing the eggs to the heat, if we put the egg yolks straight into the hot mixture they would scramble.....were making lemon curd here people not breakfast;)) 

Add the egg mixture into the saucepan and cook for a further 1 minute, the mixture will thicken slightly, enough to coat the back of a spoon

Take off the heat and put it to one side

Meringue
Place egg whites into a clean bowl (preferably metal) and beat until frothy

Once frothy slowly add in sugar and continue to beat until stiff peaks have formed, if you can tip the bowl upside down and the mixture does not fall out its done:)

To put it all together 
Pre heat oven to has mark 4 and fill the pie case with lemon mixture and spread evenly, top with the meringue and bake for around 15 minutes or until the meringue is golden! Leave to set at room temperature for 3 hours before cutting (i know i know.... Its tempting but we have to wait or we will have a sloppy mess)



And you are done....dig in and enjoy!!

Jam roly poly

Hello guys hope your all well?

Today I'm going to share with you a British classic! It may not have the best appearance but this homely looking pud is perfect for the cold nights that are fast approaching! Best served warm with custard!:) 

Ingredients 
50g margarine  
50g shredded suet
250g self raising flour
140ml milk 
5oz raspberry jam

Method
Mix together the flour, and margarine until the mix resembles bread crumbs then add the suet and mix well, add the milk until a soft slightly sticky dough is formed ( you may not need all the milk)

Roll the dough out into a rectangle onto a floured surface about 1/4 inch thick 

Spread on the raspberry jam and roll into a sausage

Wrap the dough in parchament paper leaving some room as the dough will rise and spread and then wrap again in foil again leaving some room

Bake at 180 degrees, place a pan of boiling water at the bottom of the oven! And bake the roly poly for one hour then uncover and bake for a further 5-10 minutes or until golden!

Butterscotch chip cookies

Hello everyone,

First let me apologise for the lack of posts.....I am working on exciting new things for October so stay tuned for that! However in the meantime here is a delicious recipe for butterscotch chip cookies! 

You will need:-
1 cup butter
1/2 cup granulated sugar 
1 1/2 cup soft dark brown sugar
2 eggs
3 cups plain flour
1 tsp salt
1/2 tsp baking powder
1 tsp baking soda
1 cup butterscotch chips

Method:-
Preheat the oven to gas mark 4.

Cream together the butter and both sugars until  light and fluffy, add the eggs and beat in well.

Sift together the flour, baking powder, baking soda and salt.

Add the flour mixture into the butter mixture and mix until all combined.

Using an ice cream scoop or a tablespoon, spoon the mixture onto a greased baking tray a couple of inches apart.

Finally sprinkle on some butterscotch chips and bake for approximately 10 minutes or until lightly golden.

Chocolate cream cupcakes

Hello everyone,

Today I'm going to share with you a delicious recipe for chocolate cream cupcakes......a delicious fluffy sponge, filled with vanilla custard and topped with melted chocolate! 
 
Amazing right? So let's go over the ingredients!

For the cupcakes
8oz butter
8oz sugar
8oz self raising flour 
4eggs 
1/4 cup milk 

For the custard 
1 egg
2 egg yolks 
2 cups whole milk
1/2 cup sugar
1/4 cup cornflour
2tbsp butter
2tsp vanilla 

Topping
150g dark chocolate 

Method
To make the cupcakes, preheat your oven to gas mark 4 and then cream together the butter and sugar until smooth and creamy, add in the eggs one at a time, mixing well in between each addition ( add a tsp of the flour with each egg to stop the mix curdling ), gently fold in your flour and add you milk!  Place into a prepared muffin tin and bake in a preheated oven for aprox 15 minutes or until a skewer inserted into the centre comes out clean! 


For the custard, place egg, egg yolks, 2tbsp of your sugar and your cornflour into a large bowl and mix well! Meanwhile heat your milk and remaining sugar in a saucepan...once it reaches a boil, slowly pour your milk mixture into your egg mixture stirring the whole time! Place all the mixture back into the saucepan and heat through and keep mixing (very important) until the mixture thickens, take it off the heat and stir in the butter and vanilla! Wrap with cling film and place in the fridge to cool competely!  


Once the cupcakes are cool, slice them directly in half, spoon some of the cooled custard into the centre and sandwhich the cupcake back together! Melt your chocolate in a double boiler or microwave and spoon some over each cupcake and your done!

Mint chocolate chip cookies

Hello guys!

So chocolate chip cookies are an all time favourite! But were not making chocolate chip cookies...no we are making MINT chocolate chip cookies! Taking these amazing cookies up a notch (or two)! The mint just makes them even more fabulous! So here are the ingredients:- 

For the cookie dough
200g softened butter
300g soft brown sugar
2 eggs
1tsp vanilla extract
1/2tsp peppermint extract
1tsp baking powder
200g chocolate chips
70g cocoa powder
300g plain flour

For the icing
1/2tsp peppermint extract
140g icing sugar
5tbsp boiling water
2tbsp cocoa powder

Method
1) preheat the oven to 180 degrees
2) cream together the butter and sugar until light and fluffy
3) add in your eggs one at a time, mix well inbetween each addition
4) add your vanilla and peppermint extract and mix well 
5) fold in your flour, cocoa powder and baking powder until incorporated! Stir in your chocolate chips
6) using an icecream scoop or a tablespoon, spoon the mixture onto a greased baking tray (leaving some room inbetween each cookie) and bake for around 12 minutes!

Whilst they are baking lets make the glaze! Add all the glaze ingredients to a saucepan and heat on low until all the ingredients are melted and combined!

Once the cookies are baked, take them out of the oven and drizzle over the glaze and your done!

Calling all Mary Berry fans!

Hello everyone!

Well i have a exciting blog post for you all.....the lovely people over at the BBC good food bakes and cakes show are giving you the chance to win an afternoon tea and a meet and greet with Mary Berry at the good food show ( for more information on the show and to purchase tickets visit www.bbcgoodfoodbakesandcakesshow.com ) as if that is not enough the lucky winner will also win a Kenwood stand mixer and a signed Mary Berry cookbook! 
To take part in this fabulous competition show them what your made of! Create them a bake or a cake.....there will be 1 adult and 1 junior winner from each category! For the bake category bake them anything that is not a cake...show off you bread skills, bake some cookies make a pie, you name it! But remember is has to taste as good as it looks! And then there is the cake category, they want you to make a spooky halloween cake, think witches, ghosts, bats! Get creative and scary it can be anything from cupcakes to a spooky wedding cake! 

Your fabulous bakes will be judged by the award winning master patissier and baking star, Eric Lanlard. 

Your spine chilling halloween cakes will be judged by the famous British baker, cook and TV personality John Whaite.

Important bits!
All competition pieces must be the work of the individual who has entered.
  • The closing date for all entries is midnight Friday 26 September
  • Shortlisted entries will be informed by Friday 3 October
  • All shortlisted entries must be brought to the Show between 8:30am and 10:30am on Saturday 25 October 2014 ready for display and judging. Please note any arrivals after 10:30am will not be judged. The Show opens at 9:30am so if you arrive before this time you must leave the show once your entry is delivered and return at 9:30am.
  • All shortlisted entries in the Bakes Category will receive a complimentary ticket to the show including a seat in the Eric Lanlard Theatre session at 11:00am. We regret that we cannot refund any tickets already purchased.
  • All shortlisted entries in the Cakes Category will receive a complimentary ticket to the show including a seat in the John Whaite Theatre session at 2:00pm. We regret that we cannot refund any tickets already purchased.
  • Should the entrant want to purchase additional seats for family, friends etc, we can reserve seats together in the session to be collected and paid for on arrival.  
  • Participants must agree to photographs being taken of the entries, both by organisers and the public. Should the work be reproduced, the organisers will not be liable.
  • River Street Events are not responsible for any loss / damage of competition entries
  • Winners will be announced at 3pm on Saturday 25 October at the BBC Good Food Bakes & Cakes Show.

  • A junior entry is anyone under the age of 16.
  • No professionals can enter the adult category. We consider professional as someone who has been professionally trained and runs a business.   • There is no height restriction for entries, however they must fit on a 16” x 16” board.
  • The Bakes category is a taste and visual category therefore all entries must be suitable for tasting.
  • The Cakes category - The entry must be completely edible, however dowels and cake boards can be used to support a tiered cake.
  • The Cakes category - All decorations must be edible, however wire and floral tape will be allowed should you be using sugar flowers.
  • We regret that we will be unable to return any entries, however if you wish to collect your Bake or Cake at the close of the event, we will arrange access for your to do so at 5pm on Monday 27th October.

10 great baking tips

Hello lovelies,

A good tip (or 10) makes such a difference in the kitchen....so i thought i would share with you 10 tips that i always use! 

1) I find it so annoying when you get one of those spare of the moment urges to bake, but of course you haven't prepared....your butter is chilling in the fridge and ya'll know to make cakes we need room temperate butter! But you don't want to wait a couple of hours....No problem! Take out your desired amount of butter, pop it in a microwaveable dish and put it in the microwave for a few seconds at a time until its soft to touch but not melted! Keep your eggs in the fridge too....pop them in a cup of warm water for a minute or so!

2) always getting odd bits of fluff stuck to your fondant...this has nothing to do with uncleanliness whenever we wash our surfaces, small fibres get left behind which end up in our fondant! Take a small ball of fondant and roll it around your work surface, and your hands especially after you have washed and dried them! All the bits of fluff off the hand towel etc will stick to the ball of fondant and not your finished icing! (Obviously throw the ball of fondant away after use;)) 

3) If your ever using a small amount of fruit or chocolate chips etc in your cakes, cover them in a teaspoon of the required flour to stop them all sinking to the bottom of the cake

4) When making a chocolate cake instead of using parchament paper! Grease the tins with butter and spinkle some cocoa powder around the whole tin, tap of any excess! Not only does it stop the cakes sticking it gives an extra rich flavour! 

5) When making a cake always cream the butter and sugar very well for about 5 minutes and when it comes to adding the flour fold it in gently! Never over mix once the flour is in the batter! Following this will produce lovely light and fluffy cakes!

6) Always sift your icing sugar and cocoa powder they tend to clump up a lot!

7) When making a chocolate cake always add a teaspoon of vanilla extract it helps amplify the chocolate taste!

8) Use a clean spirit level (workmans tool) to check if your cakes are level!

9) When covering a cake in ganache or buttercream! Dip your spatular in hot water shake off excess water and go around your cake with it! This will give a smooth glossy finish! 

10) Don't have a fondant smoother (you should get one) take a small ball of fondant and use that to smooth over your cake!

Lemon cupcakes

Hey guys hope your all ok?
Today im going to share with you my delicious recipe for lemon cupcakes! A vanilla cupcake, filled with lemon curd and topped with a creamy light topping! YUM!!:)  

Ingredients (makes 24)

For the cupcakes
12 oz butter 
12oz sugar
12oz self raising flour 
6 eggs
1 tsp vanilla extract 
1/4 cup of milk

For the lemon curd filling
See my blog post for lemon meringue pie and follow the instructions on how to make lemon curd or you could buy lemon curd and use that!

For the topping 
Any cream you like, I'm using dream topping as that is what my family like but you could use whipped cream, buttercream and so on! 

You will also need some extra lemon zest and some yellow and white fondant for decorating!

Method

For the cake
Preheat your oven to gas mark 4

Cream together the butter and sugar until light and fluffy 

Add in the eggs one at a time mixing well inbetween each addition (add 1tbsp of the flour in with each egg to stop the mix from curdling)

Add in the flour and mix only until combined

Add the milk again mixing only until combined 

Place into cupcake liners and bake for approximately 15 minutes or until a skewer inserted into the centre comes out clean

Leave to cool completely
 
Once cool take out the centre of each cupcake using an apple skewer or a knife and fill each one with a teaspoon or two of lemon curd

Finally top with your desired cream, sprinkle on some lemon zest and finish with a yellow flower! Here is some pictures on how i did that!

The BBC Good Food Bakes and Cakes Show team have launched a campaign to find and crown London’s Best Bakery 2014 and are asking the public along with a panel of expert judges to choose the winner.

Coinciding with the launch of the first BBC Good Food Bakes and Cakes Show, and in conjunction with BBC Good Food Bakes and Cakes Magazine, the show team are scouring London to find the very best bakeries. Combining public voting, mystery shopping and a panel of expert judges the show will crown one exceptional bakery as London’s best.

Katy Truss, artisan food expert, who is managing the competition on behalf of the BBC Good Food Bakes and Cakes Show says about the campaign…

“London is full of amazing bakeries, and with ‘real bread’ and artisan producers more popular than ever, I’m sure that with the help of London’s food-­‐lovers we’ll uncover some real gems. It’s a fabulous way of giving recognition to those going the extra mile, mindfully sourcing their ingredients, engaging with their community and above all selling high quality bakes and cakes.”

Nominations from the general public, customers, suppliers and the bakeries themselves will be taken on the show website (www.bbcgoodfoodbakesandcakesshow.com). Public voting will then take place online, resulting in a shortlist of the 10 most popular bakeries. This shortlist will be mystery shopped by a panel of baking bloggers and visited and reviewed by experts and the show team. Judges will then agree on the final three bakeries, and the winner will be announced and presented with their trophy at the show.

Judges will include:
• Helen Barker - Benfield - BBC Good Food Bakes and Cakes Editor
• Tim Kinnaird - MasterChef UK Finalist and chef owner of the award winning Macarons and More
• Katy Truss - Fabulous Food Finds
• Members of the BBC Good Food editorial team
• Members of the BBC Good Food Bakes and Cakes Show team

The BBC Good Food Bakes and Cakes Show team will also consult an advisory panel which will include experts such as Chris Young of The Real Bread Campaign.

S'mores cupcake recipe

Hi guys!

Today I'm going to share my recipe for s'mores cupcakes.....i have one word for these cupcakes "amazing"! A biscuit base, a chocolate sponge, filled with either Nutella or chocolate ganache and topped with Marshmallow! "A-MA-ZING"! Here is what you will need to recreate these wonderful treats!

(Makes 24) 

Biscuit base
7oz digestive biscuit crumbs
2oz sugar
5-6tbsp melted butter

Chocolate cake
12oz butter
12oz sugar
8oz self raising flour
4oz cocoa powder
6 eggs 
3tbsp hot water

Extras
400g Nutella (or melted chocolate or chocolate ganache...see my recipe on my blog)
Marshmallow fluff.....or 24 marshmallows 

So let's get baking:-

Preheat your oven to gas mark 4

Biscuit base
Mix all the ingredients together until well combined

Spoon 2tsp of each mixture into each cupcake cake and press down until firm

Bake in the oven for 4 minutes, remove and let cool
 
Chocolate cake
Mix the flour and cocoa powder together

In a separate bowl cream together the butter and sugar until well combined 

Add in the eggs one at a time mixing well inbetween each addition (add 1tsp of the flour and cocoa powder mixture with each egg to stop the mix from curdeling

Add in the flour and cocoa powder and mix just until combined add the water and mix until combined

Spoon onto the top of each biscuit base and bake for aprox 15 minutes or until a skewer inserted into the centre comes out clean 
 
Leave the cakes to cool, once cool use an apple skewer or a knife and cut out the centre of each cupcake

Fill it with Nutella or your favourite chcolate filling such as ganache or just melted chcolate 

Spread on your marshmallow fluff and top with more biscuit crumbs 

You could even top with a marshmallow and toast the marshmallow under the grill for a few seconds (keep an eye on it though they burn very quickly)

Brownie traybake

Hey guys hope your all well? It's been a few weeks since I've been able to sit down and write a blog post.....manic few weeks but back to it now and I have loads of new recipes to share with you all! Starting with a brownie tray bake! So let's get started...
Ingredients 
350g good quality dark chocolate
500g granulated sugar
175g plain flour
6 eggs
225g butter
1tbsp vanilla extract
1tsp baking powder
1/2tsp salt
Method
Preheat the oven to gas mark 4 and grease and line a baking tin or ceramic dish 

Melt together the chocolate and butter

In a bowl mix the sugar and eggs, add the melted butter and chocolate, mix in the salt, baking powder and flour until well combined 

Pour into the prepared dish and bake for approximately 30mins or insert a skewer into the centre and it should have a moist crumb not wet batter and its done!

Manchester tart recipe

Hello guys! Today I'm going to share with you a delicious recipe for Manchester tart....for those of you who don't know, a Manchester tart is a short crust pastry with a thin layer of raspberry jam, filled with vanilla custard and topped with coconut! 

Ingredients

Pastry:-
1 cup self raising flour
1/2 cup cold butter
Few tbsp cold water
Custard
2 cups whole milk
1/4 cup cornflour
1/2 cup granulated sugar
1 whole egg
2 egg yolks
3 tsp vanilla extract 
2 tbsp butter
Extras 
3 tbsp coconut (shredded)
2 tbsp raspberry jam 

Method 
1)  to make the pastry...preheat your oven to gas mark 4!
2) mix together your flour and butter until it resembles breadcrumbs
3) slowly add your water a tbsp at a time until the pastry comes together into a ball....the less water you use the better!
4) cover in cling film and place in the fridge for 30 minutes
5) roll out your pastry on a lightly floured surface to about 1/4 inch thick
6) place in a greased pie dish, if it tears grab another tiny bit of pastry and press it into the tear with your fingers and smooth out, prick base with a fork
7) blind bake for 10 minutes ( cover the pie with foil and add some baking beans )
8) remove foil and baking beans and bake for a further 15 minutes until golden, remove and let cool completely 
9) for the custard...in a bowl mix together 3 tbsp of the granulated sugar, egg, egg yolks and cornflour
10) in a saucepan heat up the milk and remaining granulated sugar to a gentle boil 
11) once reached a boil mix some of the milk about half slowly and mixing the whole time into the egg mixture ( we are tempering the eggs....introducing them to the heat so they don't scramble) 
12) add the egg mixture into the pan, place back on the hob and  stir consistently until the mixture begins to thicken ( it is so important to stir the whole time otherwise you will be eating scrambled eggs and not custard )    
13) once thick remove from the heat add in the butter and vanilla and mix in well, place the custard in a bowl and cover with cling film, place the cling film directly on top of the custard to stop a skin forming and place in the fridge to cool 
14) we are now finally at the assembly stage....take your cooled pie crust and spread on an even layer of raspberry jam
15) fill in the pie with your cooled custard
16) finally sprinkle on a layer of coconut and enjoy!

Oreo frosting

Hey guys, today I'm going to share with you a yummy recipe for oreo frosting, great on a variety of cakes, cupcakes, brownies....whatever your heart desires! 
Ingredients 
2 1/4 cup vegetable shortening (room temp)
1kg icing sugar
6 tbsp butter (room temp)
5 tbsp cold water
2 tsp vanilla extract
3 crushed oreo's  
Method 
Mix together the shortening and butter until combined, add the vanilla and icing sugar and mix until combined....at this stage the frosting may appear thick and crumbly, slowly add your water a tbsp at a time until you have a creamy consistency (you may need more or less water depending on consistency, too thick add more water, too runny add more icing sugar), finally mix in your oreo's! 

This frosting is great on all sorts of cakes and tastes delicious!

Caramel frosting

Hello lovelies!!

Today I'm going to share with you a super scrummy recipe for caramel frosting.....this is one of them frostings you just can't get enough of! Its delicious, easy and quick to make!

Ingredients
1 cup brown sugar
1/2 cup of butter 
1/4 cup milk
2 cups icing sugar
1 tsp vanilla extract 

Method
1) in a saucepan melt the butter
2) once melted add the brown sugar and bring to the boil and let it boil for 2 minutes stirring consistently
3) add the milk....be carefully it will froth up, keep stirring and let it come back to the boil
4) remove from the heat and add the vanilla and mix well
5) slowly add the icing sugar until its mixed in well....the frosting may appear runny but it will thicken to a spreadable and piping consistency when it cools! Once it has cooled mix well before use!

 
Tip:- add some sea salt into the finished frosting for a salted caramel frosting:)

Lemon meringue pie recipe

Hello everyone! Hope your all ok? Today I'm going to share with you a delicious recipe for lemon meringue pie....yummy!! This recipe has 3 elements:- short crust pastry, lemon curd filling and a fluffy meringue topping! So let's get started, you will need:- 
For the pastry
1 cup plain flour
1/2 cup really cold butter
1-4tbsp ice cold water
For the lemon curd
1 1/2 cup water 
1/4 cup cornflour
1 cup granulated sugar
Zest and juice of 2 lemons
4 egg yolks 
1.5 tbsp butter
For the meringue
4 egg whites
5tbsp granulated sugar
Pastry
Put flour in a bowl and mix in butter until mixture resembles fine breadcrumbs

Slowly add in water a tbsp at a time, the less you use the better.....once you can bring the mix together with your hands it's done! 

Wrap in cling film and refrigerate for at least 15 minutes, pre heat oven to gas mark 4

Take out and roll out to a couple cm thick, it may break and crumble a lot but just keep working with it

Place into a greased pie dish, if it tears, simply take another piece and press it into place, use your hands to even it out

Prick several times with a fork, place foil or parchament paper into the pastry case and fill with baking beans or dried rice, bake for 10 mins

Remove the foil and baking beans and bake for a further 15 mins or until slightly golden 

Lemon curd
In a bowl beat the egg yolks

In a saucepan mix together water, sugar, cornflour, lemon zest and lemon juice and bring to a gentle boil whisking the whole time so no lumps form, it will thicken

When its come to the boil mix in the butter then take 2 cup fulls of the hot mixture and slowly add it to the egg yolks again whisking the whole time (this is known as tempering, we are introducing the eggs to the heat, if we put the egg yolks straight into the hot mixture they would scramble.....were making lemon curd here people not breakfast;)) 

Add the egg mixture into the saucepan and cook for a further 1 minute, the mixture will thicken slightly, enough to coat the back of a spoon

Take off the heat and put it to one side

Meringue
Place egg whites into a clean bowl (preferably metal) and beat until frothy

Once frothy slowly add in sugar and continue to beat until stiff peaks have formed, if you can tip the bowl upside down and the mixture does not fall out its done:)

To put it all together 
Pre heat oven to has mark 4 and fill the pie case with lemon mixture and spread evenly, top with the meringue and bake for around 15 minutes or until the meringue is golden! Leave to set at room temperature for 3 hours before cutting (i know i know.... Its tempting but we have to wait or we will have a sloppy mess)



And you are done....dig in and enjoy!!
